Texas Caviar
-served by Dayle at Book Club in October of 2008
- 1 can black beans - drained and rinsed
- 1 can black eyed peas - drained and rinsed; OR,
garbanzos
- 1 can shoepeg corn - drained
- 2 cans mild Rotel tomatoes - drain one can; OR, 5-6
fresh roma tomatoes, chopped
- 1 bunch green onions - chopped
- 1 orange pepper - chopped
- 1/2 bottle Zesty Italian dressing (I use less); around
1/4 cup, to taste
- optional: shredded cheese
- optional: chopped zucchini
Marinate and serve with lime chips
