Texas Caviar
-served by Dayle at Book Club in October of 2008

  • 1 can black beans - drained and rinsed
  • 1 can black eyed peas - drained and rinsed
  • 1 can shoepeg corn - drained
  • 2 cans mild Rotel tomatoes - drain one can
  • 1 bunch green onions - chopped
  • 1 orange pepper - chopped
  • 1/2 bottle Zesty Italian dressing (I use less)

Marinate and serve with lime chips
