Brown Rice, Black Beans & Chicken

  • 3 c. brown rice, cooked
  • 1 can black beans, drained
  • 2 c. cooked chicken, cubed
  • 1/2 c. mayo
  • 1/3 c. cashews
  • 2 ts. light soy sauce
  • 1/4 ts. pepper

 

Combine ingredients.  Bake in greased 3-qt casserole, covered, for 15-20 minutes at 350 degrees. Serves 4.
