Brown Rice,
Black Beans & Chicken
- 3 c. brown rice, cooked
- 1 can black beans, drained
- 2 c. cooked chicken, cubed
- 1/2 c. mayo
- 1/3 c. cashews
- 2 ts. light soy sauce
- 1/4 ts. pepper
Combine ingredients. Bake in greased 3-qt casserole, covered, for
15-20 minutes at 350 degrees. Serves 4. |
