Country Veggie Grain Bake 1 c. matchstick carrots 1½ c. mushrooms, sliced 1 onion, chopped 1 bell pepper, chopped 1-2 Tb. olive oil ½ c. fresh parsley 1 c. frozen corn 1 (15 oz.) can black beans, drained 1 (15 oz.) can broth, chicken or vegetable 2 Tb. honey 1/2 c. barley, uncooked ¼ c. bulgur, uncooked ¼-½ ts. dried thyme, to taste salt and pepper to taste 1 c. shredded cheddar cheese Sauté first 5 ingredients in oil. Add remaining ingredients (except cheese) and stir well. Transfer to lightly greased baking dish and cover with foil. Bake covered at 350 degrees for 1 hour, stirring after 30 minutes. Remove from oven and uncover. Top with cheese and allow to cheese to melt before serving. |
