Spiced Sweet Potato and Black Bean Stew

Ingredients:


2 tbsp olive oil
1 medium onion, diced
3 garlic cloves, minced
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp chili powder
1/4 tsp cinnamon
1 medium sweet potato, peeled and diced
1 can (14.5 oz) diced tomatoes
1 can (15 oz) black beans, drained and rinsed
2 cups vegetable broth
1 cup corn kernels, fresh, frozen, or canned
1/2 tsp salt or to taste
1/4 tsp black pepper
Juice of 1 lime (2 Tbs)
Fresh cilantro, chopped for garnish

Directions:


1. Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 3-4 minutes.

2. Stir in cumin, smoked paprika, chili powder, and cinnamon. Cook for 1 minute until fragrant.

3. Add sweet potatoes, diced tomatoes with juice, and vegetable broth. Stir well and bring to a boil.

4. Reduce heat to low, cover, and simmer for 20 minutes until sweet potatoes are tender.

5. Stir in black beans and corn and simmer uncovered for 5-10 minutes to combine flavors.

6. Add lime juice and adjust salt and pepper to taste. Serve garnished with fresh cilantro.
