Summer Pasta
4 cartons cherry or grape tomatoes
2 avocados
4 oz. Can chopped green chilis
2 green onions
2 clove garlic
cup olive oil
1 tsp. Dried cilantro
2 tsp sugar
2 tsp salt
tsp pepper
Cut tomatoes in half and squeeze juice & seeds out. (Discard seeds and
juice).
Stir in chilis (do not drain)
Add: Chopped onions
Press garlic
Rest of ingredients avocados last
Let sit at room temperature for 1 hour. Use with 16 oz. Fresh linguini
For Salsa or Topping for Tacos
Add:
1 can of white corn
1 can of black beans
