Annies So-Good-Its-like-Candy Salad Dressing

(NOTE:  I usually make only half of this recipe it makes a lot)

Blend together in food processor:

          1 cup maple syrup
          1/3 cup cider vinegar
          1 Tbsp coarse mustard
          1 Tbsp. Dijon mustard
          2 medium shallots (you can substitute onions)
          2 (small) cloves garlic

Mix in:  1 cup oil (I use olive oil) - Blend

Toss over greens Can serve toasted almonds and/or olives to scatter on top (or serve with sliced strawberries, scallions (or red onions) and a handful of chopped walnuts).
